1、准备一根去皮洗干净的胡萝卜,切成丝,切好收入大碗中
不需要焯水,也不需要腌制,那样的话营养容易流失
2、根据胡萝卜的用量,先少打几个鸡蛋,加入适量的盐和鸡精调味,再加一把虾皮提鲜先把它搅匀
3、观察一下它的状态,如果看着有点干,可以再加几个鸡蛋,继续搅匀,这样做防止调得太稀,最后调成像这种粘稠的状态就行了
注意:这里就不用加面粉或者淀粉了,影响口感
4、模具锅或者平底锅开中火预热,刷油,盛一勺蛋液倒入锅中
5、煎制一面定型,翻过来煎至另一面,煎至两面金黄色就可以
出锅了~

大家好,我是茄子,今天和大家分享一个超级好吃的鸡蛋饼,做法简单,早餐十分钟搞定。
1、和面
面粉300克,盐3克,加入180ml温水,10ml食用油,揉成特别柔软的面团,把面团抹油盖保鲜膜饧面30分钟。为了早上节约时间,大家可以在晚上把面和出来,做成饼坯,把饼坯抹油,包上保鲜膜或者方便袋放在冰箱冷藏。抹油能使饼坯柔软不沾袋子。
2、油酥,它是饼是否层次丰富的关键。
干面粉20克,加入烧开的食用油20ml,搅拌均匀粘稠备用,油酥也可以晚上做出来。
3、葱花鸡蛋液
鸡蛋2颗,葱花碎稍微多一点,盐适量,放在一起搅拌均匀备用。
4、 *** 饼丕
饧好的面千万不要揉,揉就会增加面筋,饼会擀不开,直接下5-6个面剂。
把面剂按成薄饼,均匀抹油酥。这个面特别软,用手就可以按薄。
先上下对折,抹油酥,再左右对折
把饼丕做成圆形,按扁,再饧3分钟。面很软,容易做成圆形,也可以不做形,直接擀制。
再把饼坯擀薄或者用手按薄都可以,擀的越薄做出的饼越柔软筋道。把擀好的饼丕用擀面杖卷起下锅,饼太薄太软,用手拿容易破损变形。
5、烙饼
起锅开小火,放少许油,油温5成热下饼丕。
烙制饼表面变色刷鸡蛋液,盖上盖子闷半分钟,也可以不盖盖子。盖上盖子饼会柔软,不盖会酥脆。
半分钟开盖翻面,鸡蛋几乎已经熟了,再次翻面烙制半分钟。
再次翻面,鸡蛋金黄即可出锅
