今天到超市一看,黄花鱼挺新鲜,买回两条,给孩子做一个酱焖黄花鱼。这做黄花鱼可有个讲究,怎样才能做到肉质鲜香入味,还不腥,这才是真正的好吃。那我就介绍我 *** 酱焖黄花鱼的整个细节讲解给大家。希望所有的亲们认真阅读,下面我们就开始 *** 起来。
*** 材料:
黄花鱼两条大约600克、 姜1块、大葱半根、大蒜4瓣、八角2个干、辣椒5个、
豆瓣酱一勺、料酒5ml、蚝油3ml、老抽2ml、胡椒粉1.5克、糖3克、 香菜菜叶1根。
*** 作步骤:
1、首先我们需要处理黄花鱼,把黄花鱼的鳞去掉。把鱼肚子里的内脏和腮都清理干净。尤其是肚子里的黑膜,一定要清除 *** 净净,这层黑膜特别的腥。然后清洗干净,更好用厨房纸把水分吸干,这样后期 *** 作,防止有水遇到油会蹦到身上烫伤自己。然后我们在鱼的身上的两面都用刀轻轻地划上几刀,这样炖出来非常入味好吃。不要划得太深,划得太深,煎的时候容易碎。
2、然后再把姜切成 *** ,葱切段,蒜切片,干辣椒切开,喜欢整个放的就不用切。最后切点小香菜都装到盆里备用。
3、我们先把鱼煎一下,锅烧热放油,我今天的不是不粘锅,所以我用一块姜把锅先蹭一遍。这样煎鱼的时候,鱼就不容易破皮。油温特别热的时候下入鱼,这样鱼皮马上就会定型。然后转中小火慢慢的煎,千万别用急火这样容易把鱼煎糊。一面煎至金黄,翻面煎另一面,两面都煎至金黄盛出备用。这样煎成的鱼鱼皮是完整的,经过煎制的鱼特别香,而且容易入味。
4、现在我们开始炖鱼,锅里留油放入葱、姜、蒜、八角和干辣椒爆香。放一勺豆瓣酱,把豆瓣酱炒出香味。然后加水。我们再调一下味,放点胡椒粉,再放点糖提鲜。锅边淋入料酒去腥,放一点点老抽调一下颜色。放点蚝油调一下味道,不用放盐,这些咸淡基本上就够了。也不用放鸡精,鱼本身很鲜。大火烧开水开下入鱼,因为鱼本身是热的,这样炖出的鱼不腥。
5、先不用盖锅盖中火炖五分钟,让鱼腥味散发出去。五分钟以后转小火,盖上锅盖,炖三十分钟。这样炖出的鱼才能真正做到鱼肉入味,而不腥。
6、炖30分钟以后大火收汁,就可以装盘出锅了,非常酱焖黄花鱼就完工,往上面再撒上点小香菜就可以开吃了。我家孩子吃了一口,说肉质鲜嫩,不腥不腻,非常的香,喜欢的亲们也做一个吧。
