酸菜鱼属四川菜系,以其特有的调味和独特的烹调技法而著称。以鲜草鱼为主料,配以四川泡菜煮制而成。此菜虽为四川民间家常菜,但流传甚广。成菜肉质细嫩,汤酸香鲜美,微辣不腻;鱼片嫩黄爽滑。酸菜鱼流行于90年代初,在各地餐馆都有其一席之地,重庆的厨师们又把它推向祖国的大江南北,酸菜鱼是重庆菜的招牌菜肴。

【酸菜鱼】

1.首先,我们处理一下鱼,草鱼一条,刮鳞开肚。用刀先片下鱼肉,把鱼骨斩成段。片去鱼刺,如果不会摆弄的,可以让市场的卖鱼的给你处理好。然后再把鱼身片成鱼片。

2.把鱼片和鱼头鱼尾鱼骨分开放置。先把鱼片用水多冲洗几次,同时使鱼片吸收水分,然后挤一下表面的水分。

3.现在,我们把鱼片用调料腌一下,加入食盐1克、胡椒粉1克、料酒5克、用手抓匀,打入一个鸡蛋清,蛋清遇热迅速凝固,能够锁住鱼片的水分,口感比较鲜嫩,最后再加上一点淀粉,抓匀后,腌制15分钟。

4.酸菜用水冲洗后,酸菜叶子切成段。根部比较厚,要片成薄片。

5.大葱白一根,切成四厘米的段,生姜一块 切成薄片,加入一粒八角,一把红干椒,一把青花椒。小米泡椒一把,连同泡椒水倒入盆中备用。

6.大蒜一把,拍扁后切成碎粒。大葱白切成两半,然后切成葱花。再取出一些小米椒切碎,和蒜末放在一起备用。

7.锅里加入清水。我们先把鱼头鱼骨酸菜倒入锅内。加入一大勺料酒,开大火把水煮开。水开后煮1分钟倒出控水,然后用凉水冲洗。

8.下面,我们开始烹饪,锅里烧油,倒入葱姜花椒,红干椒。翻炒出香味以后,倒入焯过水的鱼骨和酸菜。再加入开水,再加一勺料酒,把小米椒和泡椒水一块倒入锅内。

9.加入白醋20克、食盐3克、胡椒粉2克、白糖2克、开大火把水烧开,水开后煮10分钟,然后捞出倒入盆中。把鱼头鱼尾摆好。

10.下面继续把水烧开,锅里加入鸡粉2克。然后把鱼片散开抓入锅内,用勺子轻推锅边,使水面顺势转圈,免得鱼片粘连,煮20秒钟就可以捞出。把鱼片倒入盆中,把汤汁也倒入盆中。

11.我们再激一些热油,盆中撒上蒜末,葱花和小米椒碎再加上一把红干椒。

12.锅里烧油,把油烧至冒青烟,然后把热油浇在上面,把蒜香激发出来,最后再撒上香菜。

最近随着猪肉的价格上涨,很多网友高呼“二师兄又上天了,吃不起”,秋季需要进补的时节,二师兄上不了餐桌,可家里孩子老人又都需要营养,此时肉中的“营养担当,补脑圣品”鱼肉就当之无愧在家家户户厨房横行了,其中酸菜鱼更是以其肉质细嫩,汤酸香鲜美,微辣不腻的口味成为大众都趋之若鹜的舌尖上的美食,因此阿飞今天就给大家分享,花了不到50元就能做一盆的酸爽开胃不油腻的酸菜鱼~

一份正宗的酸菜鱼应该是酸爽炸裂到能勾引起味蕾,鱼片薄厚均匀,夹起不散,没有鱼刺,入口滑嫩,不冲不呛,与金黄的酸菜汤汁融为一体,一口要下去香味直冲脑门。加入葱花、花椒,更犹如锦上添花,酸菜和鱼肉水 *** 融的香味都带着仙气的释放飘散~

之一步:处理鱼洗净的黑鱼一条从鱼尾处下刀,把两侧的鱼肉都片下来,然后把鱼刺剔除、鱼骨斩成小段,放入盆中,加入适量的清水和少许食盐,浸泡10分钟,浸泡能够充分去除鱼块中的血水,减少腥味~

阿飞唠叨:处理鱼的时候一定要把内脏,鱼鳃之类的处理干净,里面的黑膜去掉。黑膜比较脏而且腥味比较重,去除黑膜做出来的鱼不会太腥;鱼鳃处理干净,要不然会发苦;刮去表面的粘液,这样可以去除腥味

第二步:切片处理把鱼肉改刀,先刮去鱼皮,再把鱼肉斜刀片成均匀薄片,不要切的太薄,容易煮碎,放入清水中,抓洗干净后捞出,挤干水分,准备腌制~

第三步:腌制把鱼块上的血水洗干净,捞出放入盆中,加入食盐2克,胡椒粉2克,料酒10克去腥,抓拌均匀,腌制10分钟备用~

第四步:二次腌制盆中加入食盐2克,胡椒粉1克,料酒10克去腥,抓拌至鱼肉把料汁全部吸收,打入一个蛋清,抓拌均匀,蛋清能够锁住鱼肉中的水分,使口感更嫩,抓入一小把淀粉,再次拌匀腌制十分钟~

第五步:悼水大葱白一根,切成马蹄片/生姜一块,切成菱形片/野山椒一把,切成小段/大蒜几粒,拍散后切成蒜末/小葱一根,切成葱花/酸菜200克,切成段/然后,我们把酸菜焯一下水锅内烧水,放入切好的酸菜段,把酸菜滑散,煮出里面的杂质,同时也能平衡酸菜的咸酸度,水烧开以后,把酸菜倒出,控水备用~

第六步:烹饪锅内烧油,油烧热以后,撒入一小把青花椒,一小把干辣椒,爆出香辣味,倒入准备好的小料,翻炒出香味,把控过水分的酸菜倒入锅中,翻炒2分钟,炒出酸菜中的水分,酸菜只有炒干水分,吃起来才会更脆~

第七步:调味然后把腌好的鱼块下入锅中,翻炒均匀,倒入提前烧开的热水,开始调味,加入料酒20克去腥,食盐2克,鸡粉1克,胡椒粉1克,白糖少许,搅拌化开调料,料汁烧开以后,加入白醋20克,开中火煮3分钟,白醋能够软化鱼骨,充分释放鱼骨中的营养,3分钟以后,把酸菜和鱼骨捞出,盛放在盘中垫底~

第八步:煮鱼片依次放入腌好的鱼片,开大火(一定要大火,因为煮的久了容易碎,而且口感不够嫩滑)煮15秒钟,鱼片全部飘起,变成白色时捞出,肉片很嫩,下锅后不能久煮,容易变老~

第九步:起锅 把煮好的鱼片放入盘中,浇上煮鱼的原汤,撒上葱花 蒜末,放上少许青花椒、干辣椒、白芝麻备用,锅内烧油,油温升至七成热时起锅,把热油浇在小料上激出香味即可~
