秋天稍有不慎就会上火,这个时候可以吃一些秋茄子能很好地去火气。茄子性凉味甘,能清热止血、消肿止痛的作用,秋季可以吃些茄子能降“火气”;秋季茄子中花青素含量高被称为“长寿菜”,有抗氧化、延缓衰老、美容养颜,中老年人多吃点好!

一、家常烧茄子

1.准备两个紫茄子,把外皮削干净,改刀切成菱形块,切好的茄子用清水冲泡清洗;青红椒各一个切成片;一个番茄切成小块;大蒜拍扁切成蒜末备用。

2.把浸泡好的茄子捞出来,撒上一把淀粉拌匀。避免吸入过多的油脂,均匀裹满面粉即可,挂完粉以后在茄子上面稍微撒一些清水,防止炸的时候落粉浑油。

3.锅内烧油,五成油温下入茄子进行炸制,茄子定型以后再搅动,大约炸1分钟,茄子表面酥黄以后先捞出来,把油温升高至六成热,再次放入茄子复炸一遍,时间不要太久30秒钟即可。

4.锅内留底油,放入蒜末爆香,倒入番茄炒出红汁,沿锅边加入一勺清水,加入适量的蚝油、食盐、鸡粉,再淋入一点陈醋,少许老抽上色,开大火把料汁熬香,倒入青红椒片快速炒断生,倒入茄子快速颠锅,翻炒均匀后立即出锅。

二、肉沫焖茄子

1.准备两个紫茄子,把蒂切掉然后切成大小均匀的滚刀块,加入陈醋5克,防止茄子氧化变黑、再食盐3克抓拌均匀腌制15分钟,然后将上面的盐分挤干水分备用;一小块五花肉剁成肉末;一块生姜拍散后切成姜末;几粒大蒜拍散后切成蒜末;红泡椒两根切成圈;几根线椒斜刀切成小段;半个甜椒切成菱形片。

2.锅内烧油,油热后倒入切好的肉末炒香,然后倒入小料炒出料香味,加入豆瓣酱5克,把豆瓣酱炒散炒出红油,从锅边淋入一勺清水,水烧开以后开始调味。

3.加入鸡粉1克、胡椒粉1克、白糖少许提鲜、生抽10克搅拌均匀,倒入准备好的茄子,用小火焖2分钟,倒入切好的青红椒翻炒至断生,勾入少许水淀粉把汤汁收浓,再淋入少许明油提亮色泽,翻匀后即可出锅装盘。

三、香炒茄子

1.准备一个紫茄子,洗净后切成片,然后泡在清水里,防止氧化;半个青椒切成圈;一个红椒切成圈;一把大蒜拍扁后切成碎末;一段大葱切成葱花;几根香葱切成段。

2.然后将把茄子控干水分,撒入干淀粉,搅拌均匀;青红椒用水冲洗一下,也撒入干淀粉搅拌。

3.锅里烧油,油热至5成热时放入茄子,炸至金黄色后捞出控油;然后倒入青红椒圈炸20秒捞出,然后捞出控油。

4.锅内留油,倒入花椒、红干椒炒出香味,再倒入蒜末和葱花爆香以后,倒入茄子和青红椒圈,加入生抽、食盐、鸡精、白糖翻炒化开调料,再撒入香葱段和白芝麻,即可出锅装盘了。

四、香煎茄饼

1.一个胡萝卜削去外皮切成碎粒;一根火腿也切成碎粒;小葱切成葱花,全部放在同一个盆中备用。

2.准备两个紫茄子,洗干净以后切成1厘米厚的茄片,然后将茄片逐个挖去内瓤,保留完整的茄子圈,挖出来的内瓤切碎粒和胡萝卜、火腿等放在一起充当馅料,往里面打入三个鸡蛋、一勺食盐、一勺胡椒粉搅散,最后分次加入适量的面粉,调成粘稠的馅料备用。

3.电饼铛预热两分钟,均匀刷一层植物油,把茄子圈摆放在锅中,依次装入调好的馅料、并把馅料的表面铺平,然后盖上锅盖煎2分钟,然后翻面再煎2分钟两面都煎成金黄色,即可出锅装盘。

五、清炒茄子

1.将一个青茄子去蒂削皮切成丝后,泡在水里以免茄子氧化变黑;半个西红柿切成小块;青椒、红椒各一个去籽切成丝装盘备用;三个大蒜切成片,一段葱白切成片放在一起,再抓一小把红干椒。

2.锅里烧水,加入少量白醋防止茄子氧化变黑,水开后把茄子倒入锅内焯水1分钟,然后捞出茄子,控干水分。

3.锅内倒油,倒入葱、蒜、红干椒翻炒出香味,加入西红柿、青红椒翻炒,然后加入茄子翻炒,加入食盐、鸡精、白糖,再勾入水淀粉,淋入芝麻油,翻匀后即可出锅装盘。
