发面火腿芝麻饼是一道简单的家常面食,天冷面粉不好发酵,今天我们主要说一下面粉怎样发酵比较快,松软好吃。
发面火腿芝麻饼以面粉,火腿为主要食材,配上葱花,白芝麻 *** 而成,这个饼做出来外皮酥脆,里面宣软,营养价值高,做早餐,晚餐都不错,易消化,口感好。

首先准备精制小麦面粉300克,(也就是我们常说的高筋粉,一般袋子上面会有标注:做包子 馒头的字样),加入酵母3克,食盐2克,食盐能使面粉更有筋性。
然后边搅拌边加水(凉水就行),打入2个鸡蛋,增加蛋白质的含量。先搅成面絮,加入植物油5克,加入植物油可以使面起酥。
再揉成面团,反复揉搓面团 ,如果面团太干,可以再加一点清水。
揉光滑以后,盖上保鲜膜,冬天天冷,我们把和好的面团放在温暖的地方,发酵1个多小时到2个小时,如果用来做早餐,可以在前一天晚上把面和好开始发酵,醒发可以使面团中的蛋白质完全吸水膨胀,使面团更筋道,变得松软有弹性。
这个时间我们来切一点小葱花和胡萝卜粒,再切一点火腿肠粒,放在一起。
2个小时以后,面团膨胀到原来的两倍大,用手扒开面团看一下,里面呈蜂窝状,这个时候面团已经发酵好了。
在案板上撒上一点面粉,取出面团,在案板上揉搓排一下气 ,取一个大擀面杖擀成一个薄片,中间可以撒上一点面粉,把面片擀开。
擀薄以后,抹上一层植物油,抹均匀以后再撒上薄薄的一层椒盐。
把葱花,火腿粒撒在面片的中间。
用手把面片先折起一侧,折起来以后再撒上一层葱花火腿粒。
再把另一侧也折起来,卷实一点,用手按压一下,压实一点,用刀切成4厘米宽的小段。
用刷子在面剂子上面刷上清水,撒上白芝麻 。
撒匀以后用白纱布盖上再次醒发10分钟左右。
10分钟以后,我们把电饼铛打开加热,把饼上锅煎熟,先刷上一层植物油,锅热以后,把饼子放上,接触不到锅的一面再用刷子刷上一层植物油 。
30秒左右就要看一次,要勤翻动,一面煎熟以后,把面饼翻过来煎另一面。
这样来回翻几次,大概五分钟左右,这个火腿肠饼就已经煎熟了。
