麻花既可休闲品味,又可佐酒伴茶,是理想的休闲小食品。各种地方的做法不同,而且在口感上也分为酥、脆、香、甜。
咸麻花(陕西小吃)
一、准备食材
1、和面用料:中筋面粉5斤、鸡蛋10个(1.3斤)、发面(酵面)1斤、调和油1斤(和面用)、食盐25克、水1斤。
2、炸麻花备调和油5斤(炸麻花用,实际耗1.5斤)。
二、操作流程
1、和面:将面粉、鸡蛋、食盐、水、调和油、发面(酵面)倒在一起,用和面机顺一个方向搅拌均匀备用。
2、做剂子:将备好的面团分成40克大小的长条剂子,刷上油摆放整齐,盖上保鲜膜,醒发10分钟。
3、搓麻花:将醒发好的面剂子搓成细长条,两头向不同方向搓上劲,再将两头并在一起捏紧,然后再重复一次,做成麻花生坯。
4、炸麻花:油锅洗净烧热倒油,油温六成时下麻花,为让麻花不落锅底,在锅中垫一个篦子,一次性小火慢炸至金黄捞出即可。

想吃麻花不会做,大妈告诉你配方和手法,做法简单,比买的好吃自己在家炸的麻花外脆里软非常好吃,自己在家做的可根据个人口味加盐、加糖量多量少都可以,用的都是好食材质量好,比在外面买的方便还可口,做法也简单。
取1斤面粉,3个鸡蛋,一包牛奶,3勺白糖,5克酵母,把牛奶加温在30度左右和面。
揉成面团后抹点花生油饧发1-2个小时。
面发好了。
加2克面碱增香,把面团揉匀。
调油酥,2两面粉加2两花生油搅拌均匀。
把油酥卷进揉好的面里揉匀后擀成一厘米厚的片,再切成一厘米宽的条。
把切好的条搓长,两只手朝相反的方向搓上劲。
把两头对折后面条会自动缠在一起,再两手相反方向搓上劲。
再对折后把散头塞进圆圈的一头就行了。
做好的麻花饧5分钟。
油温在5成热下入麻花,一定不能急火炸,不停地翻动麻花慢火炸到色泽金黄就可捞出。
炸好的麻花外脆里软特别好吃,放凉了也不硬,而且还有嚼劲。
